Mint Chocolate Sammy

If you love dark chocolate and mint, this is the baked goo for you. Especially if you have a number of allergies. This gluten free, egg free, dairy free, soy free, cookie sandwich is delicious; a great mix of textures in the cookie and a no-mistaking mint filling makes this cookie sandwich one of my go-to treats.
